Crepes Base Recipe
- 1 cup in (125 g) all purpose flour
- 1 tbsp (15 g) super fine sugar
- pinch of salt
- 2 eggs
- 1 1/4 cups (325 ml) milk
- 1/3 cup (100ml) heavy cream
- few drops of vanilla extract
- a little olive oil to wipe the crepes maker surface
- To make the batter, put the flour, sugar, and salt in a bowl.
- Add the eggs, mix well with a whisk, then stir a 1/3 cup (100ml) milk to make a smooth batter.
- Gradually stir in the rest of the milk and cream.
- Let the batter rest in a warm place for about an hour.
- When you are ready to cook, the crepes, give the batter a stir and flavor with vanilla, orange flower water, or lemon zest.
- Use kitchen towel dipped in olive oil to wipe crepes maker surface.
- 1/3 cup of batter and distribute with the black spreader to cover the surface evenly.
- Cook the crepe for 1 min.
- As soon as little holes appear all over the surface, turn the crepe over and cook the other side for 30 - 40 sec.
- Transfer the plate in warming drawer and cook the rest of the batter, stacking the crepes.
