Zepploe
- 1/2 Stick of unsalted butter (4tbls)
- 1 Cup water
- 3 Tbls sugar
- 1/2 tsp salt
- 1 Cup flour
- 3 Eggs
- Toss Together: 4 tbls Sugar + 1 tsp Cinnamon Power
- 1. In a medium saucepan, combine butter, water, sugar, and salt. Bring to a boil.
- 2. Take saucepan off heat and add flour. Return saucepan to heat and stir continuously until mixture forms into a ball to cook off flour taste. (3-4min)
- 3. Transfer flour mixture into medium bowl, with a hand mixer, whisk dough for about a minute to cool it down. Add eggs, one at a time, incorporating each egg completely before adding the next one. Beat until smooth.
- *Add grated apple. Mix well and set aside.
- 4. Pour enough oil in a saucepan (350F). Scoop small balls with 2 spoons and drop carefully into oil (about a tablespoon). Turn balls once or twice, until golden brown. Place onto paper towels to drain access oil.
- 5. Toss Zeppole into cinnamon sugar. Serve Immediately.
