Italian Meat Loaf

  1. Saute onions and the herbs in olive oil until soft, add spinach and toss until wilted . Set aside to cool.
  2. Mix meat, egg, cooled spinach miture cheese and add bread crumbs as needed to form loaves.
  3. Form either 1 large or 2 small loaves.
  4. Bake at 350 degrees for 1 and 1/2 hour. If desired , after one hour spread top of loaves with ketsup and return tp oven.
  5. I make 2 loaves because there are only 2 of us and the rest freezes wonderfully.
  6. Any leftovers make good sandwiches!
