Italian Meat Loaf
- 3 tbs olive oil
- 1.5 pounds ground chuck
- 1 large onion chopped
- 1 tsp each of oregano, basil and thyme
- 3 or 4 cloves of crushed garlic or to taste
- several shakes of red pepper flakes
- 1 egg
- 3/4 package of fresh spinach chopped or 1 10 oz box of thawed frozen chopped spinach drained
- 1/3 cup parmesan cheese
- bread crumbs, I use flavored panko crumbs
- Saute onions and the herbs in olive oil until soft, add spinach and toss until wilted . Set aside to cool.
- Mix meat, egg, cooled spinach miture cheese and add bread crumbs as needed to form loaves.
- Form either 1 large or 2 small loaves.
- Bake at 350 degrees for 1 and 1/2 hour. If desired , after one hour spread top of loaves with ketsup and return tp oven.
- I make 2 loaves because there are only 2 of us and the rest freezes wonderfully.
- Any leftovers make good sandwiches!
