Boricua Bread Pie
- day old bread, crumbled approx. 2 cups
- 2 tbls butter
- 3 eggs
- 1/2 (4-6 onz) can cream of coconut
- 1 can evaporated milk
- 1/2 cup sugar
- 1 tsp. salt
- In a seperate pot boil;
- piece of crushed ginger
- 2 pieces cinnamon sticks
- 3 little anise stars
- bring to a boil in one cup of water
- In a seperate pot, boil;

- 3 little anise stars
- bring to a boil in one cup of water
- Mix all ingredients, including boiled ones, after straining them, and pour into 2 pie dishes, that have been buttered and floured, bake at 350* for at least 45 minutes. You will know when pie is done when toothpick inserted in middle comes out clean...invert or cut up right in dish...enjoy...
