Butternut Squash, Zucchini And Cheese Pizza

  1. Pre-heat oven to 350 degrees (or degree specified on pizza shell packaging)
  2. Chop butternut squash pieces into small cubes and shread in food processor. Heat butternut squash and 1 cup of water in saucepan coated with olive oil. Cover and stir occasionally until water is completely evaporated.
  3. Cut up zucchini and yellow squash into tiny pieces and shread in the food processor. Set aside.
  4. Coat the pizza shell with a thin layer of olive oil and the pizza sauce. Mix the zucchini and yellow squash shreads with the cooked butternut squash and coat the pizza shell with a thin layer.
  5. Slice the mozzarella into thin slices. Layer on top of the vegetable layer. Then place dollops of the ricotta cheese in between the slices. Apply another layer of the vegetable mixture.
  6. Approximate cook time is 10 minutes depending on the oven and the pizza shell.
