Vegetable Pilaf

  1. Combine 1 1/3 cups water and bouillon granules in a medium saucepan; bring to a boil and add rice.
  2. Cover; reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed. Add mushrooms, carrots, 1/2 cup water, parsley, green onions and pepper to rice; stir well.
  3. Cover and cook over low heat 5 minutes.
  4. Transfer rice to a serving dish.
  5. Sprinkle with toasted pecans.
  6. Yield:
  7. 8 servings (about 82 calories per 1/2 cup serving).
