Vegetable Pilaf
- 1 1/3 c. water
- 1 tsp. chicken flavored bouillon granules
- 1/2 c. long grain rice (uncooked)
- 1 1/2 c. sliced mushrooms
- 1 1/4 c. shredded carrot
- 1/2 c. water
- 1 c. chopped parsley
- 1/3 c. thinly sliced green onions
- 1/4 tsp. pepper
- 1/4 c. chopped pecans, toasted
- Combine 1 1/3 cups water and bouillon granules in a medium saucepan; bring to a boil and add rice.
- Cover; reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed. Add mushrooms, carrots, 1/2 cup water, parsley, green onions and pepper to rice; stir well.
- Cover and cook over low heat 5 minutes.
- Transfer rice to a serving dish.
- Sprinkle with toasted pecans.
- Yield:
- 8 servings (about 82 calories per 1/2 cup serving).
