Banana Bread
- 1 3/4 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. mashed ripe banana
- 1 Tbsp. lemon juice
- 3/4 c. sugar
- 1/3 c. margarine or butter
- 2 eggs
- 1/3 c. milk
- 1/2 c. coarsely chopped walnuts
- Lightly grease bottom only of loaf dish (9 x 5-inch).
- Combine in medium mixing bowl flour, baking powder, baking soda and salt. Mix mashed banana and lemon juice.
- Set aside.
- Beat sugar and margarine in a large bowl until light and fluffy.
- Add eggs, one at a time, beating well after each.
- Alternately stir in milk and dry ingredients.
- Fold in walnuts and banana mixture.
- Pour batter into loaf dish.
- Microwave at Medium-high 8 to 10 minutes.
- Microwave until no uncooked batter can be seen through bottom of dish.
- Cool for 10 minutes.
