Banana Bread

  1. Lightly grease bottom only of loaf dish (9 x 5-inch).
  2. Combine in medium mixing bowl flour, baking powder, baking soda and salt. Mix mashed banana and lemon juice.
  3. Set aside.
  4. Beat sugar and margarine in a large bowl until light and fluffy.
  5. Add eggs, one at a time, beating well after each.
  6. Alternately stir in milk and dry ingredients.
  7. Fold in walnuts and banana mixture.
  8. Pour batter into loaf dish.
  9. Microwave at Medium-high 8 to 10 minutes.
  10. Microwave until no uncooked batter can be seen through bottom of dish.
  11. Cool for 10 minutes.
