New Potatoes Gruyere
- 2 lb. whole tiny new potatoes (24 to 32)
- 1/3 c. water
- 1 small onion, sliced and separated into rings
- 1/4 tsp. salt
- 1 Tbsp. all-purpose flour
- 1/8 tsp. garlic powder
- 1/8 tsp. ground white pepper
- 1/2 c. milk
- 1/4 c. chicken broth
- 1/2 c. shredded Gruyere cheese (2 oz.)
- shipped parsley (optional)
- Wash the potatoes thoroughly. Halve any large potatoes.
- With a vegetable peeler, peel a strip around the center of each remaining whole potato.
- In a 1 1/2 or 2-quart microwave casserole, combine the potatoes, water, onion and salt. Microwave, covered, on High for 14 to 18 minutes or until potatoes are tender, stirring mixture twice.
- Let vegetables stand, covered, while preparing sauce.
