Divinity Fudge
- 4 c. sugar
- 1/4 c. white corn syrup
- 1 1/2 c. water
- 1 tsp. salt
- 4 egg whites
- 1 1/2 tsp. vanilla
- 1 1/2 c. walnut pieces
- few drops food color
- Do not use plastic utensils.
- Make sure all utensils are free from grease or soap.
- Mix sugar, syrup, salt and water in large heavy saucepan.
- Cook over medium-high heat until a little dropped in cold water will snap apart.
- Set syrup off heat.
- Beat egg whites in a 4-quart bowl until stiff peaks form.
- Pour syrup a little at a time in a thin stream into egg whites, beating all the time with the mixer.
- When you have poured about half the syrup, you can then pour it directly out of the pan in a thin stream. When you have added all the syrup, continue beating until the candy is thick.
- Add vanilla and food color and mix in.
- Beat until it starts to hold its shape.
- Add 1 1/2 cups walnuts.
- Stir in.
- Drop by spoonfuls on waxed paper.
