Potatoes Au Gratin

  1. Cook potatoes in boiling water to cover, 8 minutes or until tender (do not overcook).
  2. Drain and set aside.
  3. Combine cottage cheese and buttermilk in container of an electric blender or food processor; process until smooth.
  4. Transfer to a large bowl; stir in potatoes, chives and next 3 ingredients.
  5. Spoon into a 1-quart casserole coated with cooking spray.
  6. Bake at 350u0b0 for 20 minutes; sprinkle with cheese and paprika and bake an additional 5 minutes. Yield:
  7. 6 servings.
