Potatoes Au Gratin
- 3 1/2 c. peeled, finely chopped potatoes
- 1/2 c. low-fat cottage cheese
- 1/2 c. nonfat buttermilk
- 1 Tbsp. chopped fresh or frozen chives
- 2 tsp. cornstarch
- 1/2 tsp. salt
- 1/8 tsp. pepper
- vegetable cooking spray
- 1/4 c. shredded part-skim Mozzarella cheese (1 oz.)
- 1/8 tsp. paprika
- Cook potatoes in boiling water to cover, 8 minutes or until tender (do not overcook).
- Drain and set aside.
- Combine cottage cheese and buttermilk in container of an electric blender or food processor; process until smooth.
- Transfer to a large bowl; stir in potatoes, chives and next 3 ingredients.
- Spoon into a 1-quart casserole coated with cooking spray.
- Bake at 350u0b0 for 20 minutes; sprinkle with cheese and paprika and bake an additional 5 minutes. Yield:
- 6 servings.
