Shish Kabobs
- 1 c. potato chips, crushed fine
- 1 1/2 lb. ground chuck
- 2 eggs
- 2 Tbsp. Parmesan cheese
- 1/4 c. parsley, snipped
- 2 tsp. salt
- 1/2 tsp. pepper
- 4 slices bacon, cut in 1-inch pieces
- 1/2 c. canned mushroom caps
- 2 green peppers, cut in 1-inch squares and parboiled
- 3 tomatoes, cut in wedges
- 1/4 c. butter, melted (garlic-flavored, if desired)
- Combine crushed chips with ground chuck, eggs, cheese, parsley, salt and pepper.
- Mix lightly but thoroughly.
- Shape mixture into 30 balls, about 1-inch in diameter.
- Arrange meat balls, bacon slices, mushrooms, green peppers and tomatoes alternately on skewers.
- Baste with butter and cook over low heat 10 to 15 minutes, turning and basting every 3 to 4 minutes.
