Andrew'S Buffalo Meatballs
- 1/2 pound ground lamb
- 1/2 pound ground pork
- 1/2 pound ground buffalo
- 1 cup fresh bread crumbs (potato bread)
- 1/2 cup italian seasoned bread crumbs
- 2 tablespoons chopped fresh basil
- 2 tablespoons fresh chopped garlic
- 1/2 cup grated parm cheese
- 2 teaspoons kosher salt
- 1/2 teaspoon fresh ground pepper
- 1/4 teaspoon nutmeg
- 1 extra large egg beaten
- Vegetable oil
- Olive oil
- Place the ground meats, both bread crumbs, basil, parmesan, salt, pepper, nutmeg, egg and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2 inch meatballs.
- Pour equal ammounts of vegetable oil and olive oil into a pan until 1/4 inch deep, heat on medium low heat. place meatballs a few at a time and cook on all sides until nicely browned. transfer to oven or sauce to continue cooking until cooked through. 375 at 15 minutes.
