Orange And Zucchini Cake
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 3/4 c. sugar
- 1/2 c. vegetable oil
- 2 eggs
- 1/2 c. All-Bran cereal
- 1 1/2 tsp. grated orange peel
- 1 tsp. vanilla
- 1 c. grated zucchini
- 1/2 c. chopped nuts
- Combine flour, baking powder, soda, salt, cinnamon and nutmeg. Set aside.
- In large mixing bowl beat sugar, oil and eggs until well combined.
- Stir in cereal, peel and vanilla.
- Add flour mixture, zucchini and nuts.
- Mix well.
- Spread evenly in greased 10 x 6 x 2-inch (1 1/2-quart) glass baking dish.
- Bake at 325u0b0 for 35 minutes or until wooden pick inserted near center comes out clean. Cool completely.
- Spread with Orange Cream Frosting.
