Pan Steamed Mussels With Thai Herbs And Lemon Grass
- 1kg mussels, cleaned and beards removed
- 2, lemongrass stalks, finely chopped
- 4, shallots, chopped
- 6, kaffir lime leaves, roughly torn
- 2, red chillies, seeded and finely sliced
- 1 tbsp, fish sauce
- 2 tbsp, lime juice
- 2, spring onions chopped and coriander leaves to garnish
- 1.Place all the ingriedents (excluding the spring onions and corriander) together in a large pan and stir thoroughly.
- 2.Cover and steam for 5mins shaking the pan occasionally until the mussels open (discard any mussels that do not open)
- 3.Transfer the cooked mussels to a serving dish
- 4.Garnish mussels with chopped sping onions and coriander leaves and serve immediately.
- serving suggestion
- Sprinkle some crispy fried garlic pieces over the top for an interesting variation in taste.
