Mel'S Chicken Tacos
- Corn tortillas
- 2 chicken breasts
- 2 tbsb olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- bunch of fresh cilantro, chopped
- 2 medium tomatoes, chopped
- 1 thick slice of onion, chopped
- 1 mild pepper, diced
- 1 can refried beans
- 1 lime cut into wedges
- 1. Combine chopped tomatoes, onions, and diced peppers in a bowl and set aside.
- 2.Microwave the chicken breasts until almost completely cooked. Shred the chicken with a fork. Cook in olive oil with paprika, garlic powder, onion powder, and chili powder. Until fully cooked.
- 3.tpread about a tablespoon of refried beans on each tortilla and top with chicken. Microwave 20 seconds.
- 4. Top with tomato mixture and chopped cilantro. Garnish with lime wedge.
