The Best Ever Fruit Cake
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 4 oz. container lemon peel
- 4 oz. container orange peel
- 8 oz. pkg. pecans
- 8 oz. pkg. raisins
- 1/2 lb. (2 sticks) butter (do not substitute with margarine)
- 1/2 lb. brown sugar
- 5 eggs
- 1 Tbsp. vanilla
- juice from 1/2 orange, thoroughly squeezed
- juice from 1/2 lemon, thoroughly squeezed
- 2 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 jar grape jelly
- 1/2 c. Welch's grape juice
- Preheat oven to 200u0b0.
- This fruit cake is baked in a very slow oven.
- Sift flour with the baking powder and baking soda.
- Add cinnamon, allspice and nutmeg.
- Set flour mixture aside.
- Cream butter and eggs together until light and fluffy.
- Add vanilla to egg mixture.
- Gradually add the flour mixture to the egg mixture. Add, one at a time, the orange juice, lemon juice and the Welch's grape juice.
- Stir mixture until all ingredients are well blended. Add grape jelly.
- Blend well.
- Place candied cherries, candied pineapple, lemon peel, orange peel, pecans and raisins in a large bowl and mix well.
- Fold this mixture into the batter.
- Mix thoroughly.
