Jenny'S Breakfast Cookies - Gluten Free!

- 1 cup rolled oats
- 3/4 cup oat bran or quick oats
- 1/2 cup almond meal (or 1/4 cup each of almond and pecan meals)
- 1/4 cup plus 2 Tbsp. gluten free flour
- 1/4 tsp xanthan gum
- 1/2 tsp baking soda
- 3/4 cup raw pecans and/or walnuts
- 1/2 cup bittersweet chocolate chips
- optional- 1/2 cup unsweetened coconut
- (2)
- 1/2 cup raw honey
- 1/4 cup butter
- 1/4 cup unrefined coconut oil
- 1 tsp vanilla
- Mounded 1/4 tsp sea salt
- Mix (1) in a large bowl.
- Soften but be careful not to melt the honey, butter and coconut oil and whisk all #(2) ingredients together.
- Then combine (1) and (2).
- Form into balls and bake @ 325* for 9-11 minutes.
- If dough is too soft or sticky, place in refrigerator until it holds together nicely.
