Three Grain Banana Bread

  1. 1. Slice bananas into a blender and process until pureed.
  2. 2. Preheat the oven to 325 degrees.
  3. 3. Combine flours, cornmeal, baking soda and salt.
  4. 4. Cream the honey and brown sugar with the butter until light, about 3 minutes.
  5. 5. Beat in eggs until blended.
  6. 6. Beat in 1/3 of the flour mixture alternately with bananas and buttermilk.
  7. 7. Continue folding ingredients together, ending with the flour mixture. Fold in raisins and nuts.
  8. 8. Spray 2 (9 X 5 inch) loaf pans with non-stick coating. Turn batter into pans and bake at 325 degrees 50 to 60 minutes or until a toothpick comes out clean. Rotate half way.
  9. 9. Cool in the pan 15 minutes and invert onto a wire rack.
