Three Grain Banana Bread
- 3 large ripe bananas
- 2 cups whole wheat flour
- 1 cup regular flour
- 1 cup cornmeal
- 1 teaspoon baking soda
- a1/2 teaspoon salt
- 1/2 cup honey
- 1/4 cup brown sugar, packed
- 1/4 cup butter softened
- 2 eggs
- 1/2 cup buttermilk
- 1 cup raisins
- 1/2 cup chopped walnuts
- 1. Slice bananas into a blender and process until pureed.
- 2. Preheat the oven to 325 degrees.
- 3. Combine flours, cornmeal, baking soda and salt.
- 4. Cream the honey and brown sugar with the butter until light, about 3 minutes.
- 5. Beat in eggs until blended.
- 6. Beat in 1/3 of the flour mixture alternately with bananas and buttermilk.
- 7. Continue folding ingredients together, ending with the flour mixture. Fold in raisins and nuts.
- 8. Spray 2 (9 X 5 inch) loaf pans with non-stick coating. Turn batter into pans and bake at 325 degrees 50 to 60 minutes or until a toothpick comes out clean. Rotate half way.
- 9. Cool in the pan 15 minutes and invert onto a wire rack.
