Southeast Asian Chicken Salad With Peanut Dressing
- 4 cups shredded poached chicken breast
- 1 cup shredded green or napa cabbage
- 1 cup shredded red cabbage
- 1 red bell pepper - julienned
- 1 green bell pepper - julienned
- 1 large carrot - julienned
- 1/2 red onion - julienned
- 1/4 cup chopped green onion
- 1/2 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup unsweetened shredded coconut (optional)
- 1 large minced jalapeno (optional)
- Crushed peanuts (optional)
- Dressing:
- 1/2 cup lime juice
- 1/2 cup natural peanut butter
- 1 tbsp. soy sauce
- 1 tbsp. fish sauce
- 1 clove minced garlic
- 1 minced shallot
- 1/4 cup sucralose (Splenda)
- Salt and fresh ground pepper to taste
- Combine chicken breast with cabbage, peppers, carrot, red and green onion, cilantro, mint, coconut, and jalapeno.
- Whisk together dressing ingredients and combine with chicken vegetable mixture.
- Top with crushed peanuts and garnish with additional cilantro and mint.
