Fresh Mixed Berries With Sabayon Brûlée
- 10 egg yolks
- 1/2 cup granulated sugar
- 1/2 cup moscato wine (or dry marsala or Vin Santo)
- 4 cups cleaned strawberries
- 2 cups cleaned blackberries
- 2 cups cleaned raspberries
- 3 cups cleaned blueberries
- 1/2 cup brown sugar
- In the top of a double broiler, whisk the egg yolks, granulated sugar, and wine over simmering (but not boiling) water, until the mixture becomes frothy and thick, about 6 to 7 minutes.
- Mix the berries together, then put them on a concave ovenproof platter or concave ovenproof plates. Pour the sabayon over the fruit, sprinkle the brown sugar on top, and put the plate(s) under the broiler just until the surface browns, about 30 seconds. (Watch carefully to avoid burning!)
