Mini Rum Harvest Fruit Tarts

  1. Preheat oven to 350 F.;
  2. 1. In a small, microwave save bowl combine dried fruits, apple juice, and rum. Microwave for 2 minutes.;
  3. 2. In another small bowl combine chopped apple, brown sugar, and flour.;
  4. 3. Stir hot dried fruit mixture into apples. Set aside.;
  5. 4. Combine stuesel ingredients in a bowl. Cut in butter with pastry blender or fingers until mixture represents coarse crumbs.
  6. 5. Set shells on an ungreased baking sheet. Fill shells with fruit mixture and top with struesel mixture.
  7. 6. Bake at 350 F for 8 minutes. Transfer to wire rack and cool.
