Nectarine Tartines
- 1 red onion, thinly sliced
- Olive oil
- Salt & pepper
- 4 slices sourdough bread (Trader Joe's Cracked Wheat sourdough works well)
- 1/2 tub mascarpone cheese
- 2 teaspoons finely chopped fresh sage
- 4 thin slices prosciutto
- A few nectarines, sliced 1/4" thick (enough to cover the 4 slices of bread)
- Caramelize the onions by sauteing in the olive oil with a sprinkle of salt, starting on medium heat and gradually reducing the heat to low to maintain a steady low sizzle as the onions start to wilt. Cook until the onions darken and are very soft. Season with freshly ground pepper.
- Toast the bread well, until golden brown. Spread each slice with mascarpone and sprinkle with sage. Top with the prosciutto, then with the onions, then with the nectarines. Serve.
