Nectarine Tartines

  1. Caramelize the onions by sauteing in the olive oil with a sprinkle of salt, starting on medium heat and gradually reducing the heat to low to maintain a steady low sizzle as the onions start to wilt. Cook until the onions darken and are very soft. Season with freshly ground pepper.
  2. Toast the bread well, until golden brown. Spread each slice with mascarpone and sprinkle with sage. Top with the prosciutto, then with the onions, then with the nectarines. Serve.
