Ham With Fruited Bourbon Sauce
- 1 bone-in ham, butt portion (about 6 pounds)
- 1/2 cup apple juice
- 3/4 cup packed dark brown sugar
- 1/2 cup raisins
- 1 tsp ground cinnamon
- 1/4 tsp red pepper flakes
- 1/3 cup dried cherries
- 1/4 corn starch
- 1/4 cup bourbon, rum or apple juice
- 1. Coat Crock Pot with nonstick cooking spray. Add ham, cutside up. Combine apple juice, brown sugar, raisins, cinnamon and red pepper flakes in small bowl; stir well. Pour mixture evenly over ham. Cover; cook on LOW 9-10 hours or on Higy 4 1/2 to 5 hours. Add cherries 30 before end of cooking time.
- 2. Transfer ham to cutting board. Let stand 15 minutes b4 slicing.
- 3. Pour cooking liquid into large measuring cup and let stand 5 minutes. Skim and discard excess fat. Return cooking liquid to Crock Pot.
- 4 Turn Crock Pot to HIGH. Whisk cornstarch and bourbon in small bowl until cornstarch is dissolved. Stir into cooking liquid. Cover; cook on HIGH 15- 20 minutes longer or until thickened. Serve sauce over slice ham
