Amazingly Light Risotto
- 1/2 lb of medium sized shrimps - fresh or frozen
- Two chicken breasts - sliced thin
- 2 large peppers - 1 red, yellow
- 2 tbsp butter
- Pinch cayenne pepper
- Pinch red pepper flakes
- 3 crushed garlic cloves
- 1 onion
- 1 1/4 c of arborio rice
- 1 cup of mushrooms - chopped
- 1 cup of snow peas
- 1/2 c white wine
- 12 oz of chicken broth
- 2 c water
- 1/4 c of parmesan cheese
- 1/4 c of fresh coriander
- salt and white pepper to taste
- Melt butter in saucepan. Add chicken and garlic clove. Sprinkle with cayenne. Sir fry and remove from pan. Add peppers, onion, snowpeas, then add rice and stir till coated.
- While constantly stirring rice, add red pepper flakes and wine, stir till wine is absorbed.
- Add chicken broth, stir till absorbed, then add water (to create creamy textured risotto)
- Add in shrimp, cheese, salt and white pepper to taste.
