Mushroom Thyme Bisque
- 2 cloves garlic, chopped
- 3 cups shitake mushrooms, cleaned and diced
- 3 cups (2 medium caps) of portobello mushrooms, cleaned and medium diced
- 1/2 cup onion, small dice
- 4 cups vegetable or chicken stock
- 4 tablespoons butter (or olive oil)
- 4 tablespoons all purpose flour
- Leaves from 3 sprigs of thyme
- saute onion and garlic in butter (or olive oil) for 2-3 minutes then add the mushrooms, season with salt and pepper. saute until tender (3-5 minutes) then sprinkle with flour and stir until absorbed. add thyme and broth and stir so that there are no lumps of flour and the mixture is smooth. reduce the heat and simmer for 15 minutes.
- remove soup from heat and cool for 15 minutes. place soup in a blender (or blend using immersion blender) until smooth.
