Kapama (Lamb Shanks)
- 2 lamb shanks
- 2 tbsp. butter or oil
- 1 medium onion, chopped
- 1 tbsp. minced garlic
- 1 can diced tomatoes, with juice
- 1/2 cup dry, white wine
- 1 stick cinnamon
- 1 tsp. ground cinnamon
- 4 whole cloves
- 4 whole allspice
- 1/2 tsp. ground allspice
- 2 tbsp flour
- 1 tsp. oregano
- 1 tsp. thyme
- 1 cup chicken broth
- salt and pepper to taste
- 1 lb. fresh green beans, trimmed
- Roll shanks in flour. In large pot, brown in oil. Add onion and garlic, stirring, for 2 minutes. Add tomatoes, wine, chicken broth and seasonings, mixing well. Simmer on low for 1 1/2 hours, adding more wine and/or broth if needed. Add the green beans after lamb has cooked for 1/2 hour. Serve with rice and sauce after removing cardamon, cloves and cinnamon.
