Kapama (Lamb Shanks)

  1. Roll shanks in flour. In large pot, brown in oil. Add onion and garlic, stirring, for 2 minutes. Add tomatoes, wine, chicken broth and seasonings, mixing well. Simmer on low for 1 1/2 hours, adding more wine and/or broth if needed. Add the green beans after lamb has cooked for 1/2 hour. Serve with rice and sauce after removing cardamon, cloves and cinnamon.
