Great Potato Rolls

  1. Dissolve yeast and 1/4 cup sugar in 1/4 cup lukewarm water. Stir well.
  2. Scald milk and add margarine to melt.
  3. Stir in 1/4 cup sugar and 1 teaspoon salt.
  4. While hot, add potato flakes.
  5. Stir well, then add 1/2 cup cold water and beaten eggs.
  6. When milk mixture is lukewarm, add yeast mixture.
  7. Stir in flour until dough is fairly stiff.
  8. Cover.
  9. Let rise until double, about 1 hour. Knead dough on floured surface.
  10. Roll out to about 1/2-inch thick. Cut with cutter.
  11. Let rise until double, about 1 hour.
  12. Bake at 450u0b0 for about 10 to 12 minutes.
