Great Potato Rolls
- 1 c. milk
- 1 stick margarine
- 1/4 c. sugar
- 1 tsp. salt
- 1 c. potato flakes
- 1/2 c. cold water
- 2 eggs, well beaten
- 2 pkg. dry yeast
- 1/4 c. lukewarm water
- 1/4 c. sugar
- 2 1/2 c. plain flour
- 3 c. self-rising flour
- Dissolve yeast and 1/4 cup sugar in 1/4 cup lukewarm water. Stir well.
- Scald milk and add margarine to melt.
- Stir in 1/4 cup sugar and 1 teaspoon salt.
- While hot, add potato flakes.
- Stir well, then add 1/2 cup cold water and beaten eggs.
- When milk mixture is lukewarm, add yeast mixture.
- Stir in flour until dough is fairly stiff.
- Cover.
- Let rise until double, about 1 hour. Knead dough on floured surface.
- Roll out to about 1/2-inch thick. Cut with cutter.
- Let rise until double, about 1 hour.
- Bake at 450u0b0 for about 10 to 12 minutes.
