Scampi Salad Platter
- 4 c. torn fresh spinach leaves
- 1 (15 oz.) can garbanzo beans, drained
- 1 (8 oz.) can sliced water chestnuts, drained, or 1 small jicama, peeled and cubed
- 1 c. sliced fresh mushrooms
- 1/3 c. sliced green onion
- 1/4 c. Italian salad dressing
- 1 clove garlic, minced
- 1 Tbsp. olive oil or cooking oil
- 1 c. dry white wine
- 1 lb. fresh or frozen, peeled, deveined shrimp
- 4 hard-cooked eggs, quartered
- 4 (1 oz.) slices Cheddar cheese, cut into triangles
- 2 medium tomatoes, cut into wedges
- 2 Tbsp. Italian salad dressing
- In a large mixing bowl, combine the spinach, garbanzo beans, water chestnuts or jicama, mushrooms and green onion.
- Add the 1/4 cup Italian dressing; toss to mix.
- Cover and chill.
