Pasta With Chicken And Broccoli
- 1/4 c. extra virgin oil
- 2 garlic cloves, finely chopped
- 1/2 lb. boneless, skinned chicken breast, sliced to 1/2 inch strips
- 1 1/2 c. fresh broccoli florets
- 3/4 c. oil packed sun- dried tomatoes, drained & thinly sliced
- 1 tsp. dried basil
- pinch of crushed red pepper flakes
- 3/4 c. chicken broth
- 1/4 c. dry white wine
- 1 Tbsp. butter or margarine
- 1/2 lb. bow-tie pasta, cooked and drained
- salt and pepper to taste
- grated Parmesan cheese
- In a large skillet, heat oil on medium heat.
- Saute garlic about 1 minute, till golden.
- Add chicken strips and saute till almost completely cooked-about 7-10 minutes.
- Add broccoli and cook till crisp-tender.
- Add sun-dried tomatoes,
- basil, red pepper flakes, salt and pepper.
- Add the wine, then add chicken broth and butter or margarine.
- Cook 3-5 minutes or until heated thoroughly stirring occasionally.
