Lemon Garlic Artichoke Salad

  1. Cut the artichokes in quarters and put in a bowl. Add red pepper, onion, cucumber, olives, tomatoes, and capers and mix.
  2. In another bowl, whisk together garlic, olive oil, lemon juice, salt and pepper. Mix this with the vegetables Let salad stand for 1/2 hour for flavours to blend and then garnish with parsley and serve. Delicious!
