Pear And Manchego Salad With Walnut Dressing
- 10 cups mixed baby lettuce
- 2 red Bartlett pears (or other red skinned pear), sliced into wedges
- 1/4 cup walnut halves, toasted and roughly chopped
- 1 oz Manchego cheese, thinly shaved
- 3 tbsp walnut oil
- 1 tbsp sherry vinegar
- 1 tbsp water
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/4 tsp salt
- 1/8 tsp cracked pepper
- 2 tbsp pomegranate seeds
- 1. Divide the lettuce, pear wedges, walnuts and cheese among 4 plates.
- 2. In a small bowl, whisk together oil, vinegar, water, mustard, honey, salt and pepper.
- 3. Drizzle each salad with dressing, then sprinkle 1/2 tsp pomegranate seeds on top.
