Almond Chicken

  1. Remove bones and skin from chicken.
  2. Pound flat with heavy pan; cut in half.
  3. Arrange slice of cheese and ham on each piece of chicken.
  4. Fold short sides over filling; roll up lengthwise. Secure with wooden toothpicks.
  5. Dust with flour; dip into beaten egg.
  6. Coat with crumbs.
  7. Arrange rolls on microwave tray or baking dish; dot with butter.
  8. Cover lightly with waxed paper.
  9. Microwave on High for 4 minutes.
  10. Uncover; microwave 2 minutes more or until chicken is tender.
  11. Season to taste with salt and pepper.
  12. Serves 4.
