Almond Chicken
- 1 c. mayonnaise
- 3 Tbsp. lemon juice
- 1/4 c. chopped onion
- 2 c. diced, cooked chicken
- 2 c. chopped celery
- 2/3 c. slivered almonds
- 1 c. crushed potato chips
- 1/2 c. shredded sharp cheese
- 2 whole chicken breasts (about 10 oz. each)
- 4 oz. Swiss cheese, thinly sliced
- 1/4 lb. ham, thinly sliced
- 1/4 c. flour
- 1 egg, beaten
- 1/2 c. fine dry bread crumbs
- 2 Tbsp. butter
- salt and pepper to taste
- Remove bones and skin from chicken.
- Pound flat with heavy pan; cut in half.
- Arrange slice of cheese and ham on each piece of chicken.
- Fold short sides over filling; roll up lengthwise. Secure with wooden toothpicks.
- Dust with flour; dip into beaten egg.
- Coat with crumbs.
- Arrange rolls on microwave tray or baking dish; dot with butter.
- Cover lightly with waxed paper.
- Microwave on High for 4 minutes.
- Uncover; microwave 2 minutes more or until chicken is tender.
- Season to taste with salt and pepper.
- Serves 4.
