Roasted Pumpkin And Sweet Potato Pilau
- 2 cups peeled fresh pumpkin, 1/2 inch cubes
- 1 1/2 cups peeled sweet potato 1/2 inch cubes
- cooking spray
- 2 tsp olive oil
- 1 cup diced onion
- 1/3 cup diced celery
- 2 tsp minced garlic
- 4 cups chicken broth
- 1 cup brown rice
- 2 tsp fresh sage
- S&P
- 1 bay leaf
- 1. Preheat oven to 400 degrees
- 2. Arrange pumpkin and sweet potato on cooking shheet sprayed with cooking spray. bake at 400 for 35 minutets or until just tunring brow.
- 3. heat oil in large saucepan over med high heat. Add onion and celery and garlic. Saute 3 minutes or until onion is tender. Add broth and remaining ingredients, stir and bring to boil. Cover reduce heat and simmer 50 minutes or until rice is done. Remove from heat, discard bay leaf. Add pumpkin mixture and stir gently to combine.
