Chicken With Port Wine Sauce
- 1 c. chicken broth
- 1 lb. fresh mushrooms
- 4 Tbsp. butter
- 1/2 c. chopped green onions
- 1/2 c. Port wine
- 1/2 c. cream
- 4 boneless chicken breasts
- 1/4 c. chopped parsley
- salt and pepper to taste
- Wash and slice mushrooms.
- Melt butter and saute green onions 5 minutes without burning.
- Add mushrooms, salt and pepper.
- Saute over medium heat 10 minutes, stirring occasionally.
- Preheat oven to 325u0b0.
- Add chicken broth, Port and cream to mushrooms and simmer for five minutes.
- Put mixture into baking dish.
- Arrange chicken breasts in a single layer on top of the mixture.
- Season with salt and pepper.
- Cover dish tightly with tinfoil.
- Bake in center of oven for 30 minutes.
- Sprinkle with parsley and serve immediately.
