Spinach Salad With Warm Bacon-Mushroom Dressing

• bacon
• fresh spinach leaves
• mushrooms
• olive oil
• red onion,
• apple cider vinegar
• honey
• Dijon mustard
• Salt and pepper
• hard boiled egg

1. Saute:
2. 4 strips bacon, diced
3. Saute in 1 T. Bacon Drippings:
4. 1 lb. mushrooms, halved
5. Heat and Saute:
6. 1 T. olive oil
7. 3/4 cup red onion, sliced
8. Stir in:
9. 1/4 cup apple cider vinegar
10. 3 T. honey
11. 1 T. Dijon mustard
12. Whisk in:
13. 1/3 cup extra-virgin olive oil
14. Salt and pepper to taste
15. Toss Dressing with:
16. 1/2 lb. fresh spinach leaves
17. Reserved bacon and mushrooms
18. Purchased croutons
19. Quartered hard cooked egg, optional
