Apple Cranberry 'Honey' Crisp
- Filling:
- 5 Granny Smith Apples, peeled,
- cored and cut into 1 inch
- cubes
- 1 bag of Craisens
- 1/3 cup Florida Crystals
- 1/4 cup orange juice
- Crisp:
- 1 cup oatmeal
- 1/3 cup dark brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 1/2 cups unbleached white
- flour
- 3/4 cup cold Earth Balance
- margarine, cut into cubes
- 1/2 cup Just-Like-Honey (available at www.suzannes-specialties.com) or Agave nectar
- Preheat the oven to 375 degrees F.
- Lighly oil a 11 x 7 baking dish.
- Combine all of the filling ingredients in a bowl. Spoon into the prepared baking dish.
- In a seperate bowl combine the oatmeal, brown sugar, cinnamon, nutmeg and flour. Cut in the Earth Balance until coarse crumbs form. Add the Just-Like-Honey and gently mix to just incorporate.
- Spread the topping over the apples. Bake for 30 - 40 minutes or until the topping is browned and the fruit bubbles.
- Serve warm with a scoop of vanilla soy ice cream.
