Nana'S Krumkake
- 6 eggs, slightly beaten
- 1.5 cup sugar (scant)
- 1 T. vanilla
- Pinch of salt
- 3/4 lb (3 sticks) melted butter, cooled
- 2 1/4 c flour (scant, sometimes less than 2 c depending on size of eggs and humidity)
- Heat krumkake iron on both sides until completely hot (more than 10 minutes). Slowly add sugar to eggs. Add vanilla, salt, and butter. Slowly add flour until batter is right consistency (like very thin pancake batter). Pour small amount on iron, flip iron, cook until very lightly browned. Remove with metal spatula and immediately wrap around krumkake cone (wooden cone). It will cool almost immediately. Remove from cone and let completely cool. Periodically, you need to wipe the iron with a cloth as melted butter begins to accumulate.
- Store in cookie tin lined with wax paper. I tuck one or two inside another and then gently stack. Top with wax paper. Cookies can be frozen. I tape the cookie tin shut with freezer tape.
