Feta Bruschetta With Maust-O-Khiar
- Maust-o-khiar:
- One cup plain, unsweetened yogurt(or Greek yogurt)
- 1/2 tbs dried mint leaves(more or less to taste)
- Approximately 1/4 cup roughly chopped cucumber(peeled and seeded. Pieces should be about 1/2 inch)
- 1/3 tsp salt(optional)
- Bruschetta:
- 1 loaf(16 slices)Italian bread
- 1/2 cup fresh spinach leaves
- 1/2 cup crumbled feta cheese
- Freshly chopped parsley (to taste)
- Dried or fresh mint leaves(to taste)
- Chopped green onion(to taste; optional)
- Prepare maust-o-khiar. Simply combine the yogurt, mint and cucumber in a small mixing bowl and set aside.
- Toast bread and cut into small squares.
- Spread a thin layer of maust-o-khiar onto bread squares(only use the yogurt; you don't want any cucumber chunks).
- Arrange a few spinach leaves over each bread square(the maust-o-khiar will help them stick)
- Add a large dollop(1-2 tbs)of maust-o-khiar on top of the spinach. This time, you'll want to get the cucumber chunks in there.
- Sprinkle with crumbled feta cheese
- Sprinkle with mint and parsley, to taste. You can also add some chopped green onion to the top, to give a little bite. Serve fresh.
