Peppermint Cream Fudge
- 1 1/2 teaspoons butter, softened (no substitutes)
- 2 ounces cream cheese, softened
- 2 cups confectioners' sugar
- 3 tablespoons baking cocoa
- 1/2 teaspoon milk
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped nuts
- Peppermint Layer
- 2 ounces cream cheese, softened
- 2 cups confectioners' sugar
- 1/2 teaspoon milk
- 1/2 teaspoon peppermint extract
- 1/4 cup crushed peppermint candies
- 1. Line the bottom and sides of an 8 x 4 x 2 inch loaf pan with foil.
- 2. Grease foil with 1 1/2 t.
- 3. butter; set aside.
- 4. In a small mixing bowl, beat cream cheese.
- 5. Gradually beat in confectioners' sugar, cocoa, milk and vanilla.
- 6. Stir in the nuts.
- 7. Spread into prepared pan.
- 8. Chill for 1 hour or until firm.
- 9. For peppermint layer, beat cream cheese in a small mixing bowl.
- 10. Gradually beat in confectioners' sugar, milk and extract.
- 11. Stir in peppermint candy.
- 12. Spread evenly over chocolate layer.
- 13. Chill for about one hour or until firm.
- 14. Using foil, lift fudge from pab.
- 15. Gently peel off foil.
- 16. Cut into squares.
