Braised Barbecued Short Ribs
- 4 lb. beef short ribs
- salt and pepper to taste
- 1/2 onion, finely chopped
- 1 Tbsp. vegetable oil
- 1 garlic clove, minced
- 1 c. ketchup
- 2 Tbsp. molasses
- 1 c. water
- 1 Tbsp. brown mustard
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. hot sauce
- 2 Tbsp. cider vinegar
- Season short ribs with salt and pepper.
- Brown under a broiler or on a hot grill.
- Meanwhile, in a pressure cooker, over moderate heat, cook the onion until tender.
- Add the garlic and stir to combine.
- Add the remaining ingredients and bring to a boil.
- Add the browned ribs and seal pressure cooker.
- Cook over high heat until steam flows steadily.
- Turn heat down so that steam keeps a constant stream.
- Cook for 15 minutes.
- Turn off heat and allow pressure cooker to cool naturally for 10 minutes.
- After 10 minutes, release pressure and open cooker carefully.
- Place meat on platter.
- If sauce is too thin, boil for a minute, until thickened. Serves 4.
