Pork And Peppers
- 2 Tbsp olive oil
- 3 cloves garlic, chopped
- 1 1/2 lbs boneless pork, cut into 1 inch pieces
- 4 sweet peppers, cut into 1-inch pieces
- 1 large onion, chopped
- 1 can (28 oz) plum tomatoes
- 1 1/2 tsp dried oregano
- 1/2 tsp parsley flakes
- 1/4 tsp black pepper
- 6 oz uncooked egg noodles
- Heat olive oil in large pot; add garlic and cook 1 minute. Add pork and cook 5 minutes, until lightly browned, being careful not to let garlic burn. Stir in peppers and onion and cook for an additional 5 minutes, stirring occasionally. Add tomatoes and break up with a wooden spoon. Stir in the oregano, parsley and black pepper. Bring to a boil over high heat. Lower to medium-low heat and simmer, with the lid ajar, for 50 minutes, stirring occasionally. Meanwhile, cook egg noodles. Drain. Serve pork and peppers over noodles.
