Lila'S Bran Muffins
- 2 c. 100% Bran cereal (Nabisco)
- 2 c. boiling water
- 2 c. sugar
- 1 c. oil
- 4 eggs, beaten
- 1 qt. buttermilk
- 5 tsp. soda
- 5 c. flour (may use white or whole wheat or combination of both)
- 1/2 tsp. salt
- 4 c. all-bran cereal
- 1 lb. raisins
- Mix cereal and boiling water and set aside to cool.
- Mix sugar, oil, eggs, buttermilk, soda, flour and salt together with cooled cereal mixture.
- Add all-bran cereal and raisins.
- Pour into muffin cups and bake at 375u0b0 for 15 to 20 minutes.
- Snipped dried apricots, chopped fresh apple or chopped cranberries may be added for half the raisins.
- Chopped nuts are a good addition. This keeps in the refrigerator for 4 weeks, or bake all at once and freeze.
