Easy Chicken Pot Pie
- 1 large fryer, cooked and deboned
- 1/2 c. chopped cooked celery
- 1/2 c. chopped cooked onion
- 1 small jar pimento
- 1 large can English peas
- 3 boiled eggs
- 3 c. chicken broth
- 1 can cream of chicken soup
- salt and pepper to taste
- 1 stick oleo, melted (for top)
- 1 1/2 c. sweet milk
- 1 1/2 c. self-rising flour
- Cook and debone 1 large fryer.
- In a large bowl, dice chicken and add the celery, onion, English peas, eggs, pimento, broth and soup; add salt and pepper to taste.
- Mix all together and place in 1 large or 2 medium casserole dishes and top with the following: 1 stick oleo (melted), 1 1/2 cups milk and 1 1/2 cups self-rising flour.
- Pour over chicken mixture and bake at 400u0b0 for 30 to 40 minutes or until light brown.
