Codfish Appetizers

  1. Saute cod in butter in medium saucepan.
  2. Add parsley, ketchup and salt and pepper (as needed).
  3. Remove cod and shred.
  4. Mix flour and milk; add to saucepan.
  5. Bring flour mixture to simmer over low heat; boil and stir 1 minute.
  6. Add cod; heat through.
  7. Remove from heat; stir in egg yolks.
  8. Let cool, then refrigerate 30 minutes. Beat egg whites until stiff peaks form.
  9. Add baking powder to cod mixture; stir well, then fold in egg whites.
  10. Drop by spoonfuls into hot oil.
  11. Remove when golden; drain well on paper towels. Serve warm.
