Codfish Appetizers
- 1/2 lb. codfish
- 1 Tbsp. butter
- 1 Tbsp. chopped parsley
- 1 Tbsp. ketchup
- 1/2 c. all-purpose flour
- 1/2 c. milk
- 2 eggs, separated
- 1 tsp. baking powder
- salt and pepper to taste
- Saute cod in butter in medium saucepan.
- Add parsley, ketchup and salt and pepper (as needed).
- Remove cod and shred.
- Mix flour and milk; add to saucepan.
- Bring flour mixture to simmer over low heat; boil and stir 1 minute.
- Add cod; heat through.
- Remove from heat; stir in egg yolks.
- Let cool, then refrigerate 30 minutes. Beat egg whites until stiff peaks form.
- Add baking powder to cod mixture; stir well, then fold in egg whites.
- Drop by spoonfuls into hot oil.
- Remove when golden; drain well on paper towels. Serve warm.
