Stlton Fritters With Cranberry Orange Relish
- 8 oz. Stilton Cheese
- 8 oz. cream cheese
- 1 cup fresh cranberries
- 1/2 orange, cut into wedges, rind on, pits removed
- 1/4 cup sugar
- 2 eggs, lightly beaten
- 1 cup plain bread crumbs
- Vegetable oil for deep frying
- In a food processor, combine the Stilton and cream cheese and process until blended but not absolutely smooth. Transfer to a small bowl and refrigerate until firm, at least an hour. When firm, roll the mixture into balls about the size of Ping-Pong balls. Transfer to a plate anda refrigerate another hour.
- Combine the cranberries, orange wedges and sugar in a food processor and process until smooth. Transfer to a bowl and set aside.
- When ready to fry the fritters, place the eggs in a bowl and the crumbs on a plate. Dip the balls one at a time into the egg, then roll each in the bread crumbs. Dip the balls once more in the egg and crumbs. Heat oil to a dept of about two inches. Whe the oil is very hot, working in bwtches, fry the fritters until gooden brown. Transfer to a wire rack or paper towels to drain. Serve with cranberry relish on the side.
