Steph'S Meatloaf
- 1 lb 90% lean ground beef
- 1/2 lb ground pork
- 1/2 lb ground veal
- 22 saltines, crushed fine
- 1/3 cup milk
- 4 tbsp Worcestershire sauce
- 1/3 cup minced parsley
- 2 tbsp Dijon mustard
- 1 extra-large egg
- 1 yellow onion, chopped fine
- 1/2 cup celery, chopped fine
- 1 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
- 3/4 tsp salt
- 3/4 tsp fresh-ground pepper
- Glaze
- 1/2 cup chili sauce
- 1/4 cup packed light brown sugar
- 4 tsp cider vinegar
- Adjust oven rack to middle
- position; heat oven to 375.
- Heat 1 tbsp butter over med-high heat until foaming; add onion and celery and cook, stirring occasionally, until beginning to brown, 6-8 minutes.
- Mix cracker crumbs, vegetables, milk, Worcestershire, parsley, mustard, egg, garlic powder, cayenne, salt and pepper in
- large bowl. Add meat and mix
- gently with hands until evenly combined.
- Place rack in rimmed baking
- sheet and poke a number of
- holes in it with a skewer.
- Spray with nonstick cooking spray(or use non-stick foil)
- Place meatloaf on foil and
- shape into a loaf. Bake until
- instant-read thermometer inserted into center of loaf
- reads 135-140 degrees, 55-65 minutes. Remove from oven and turn on broiler.
- Spread half of glaze evenly over mealoaf with rubber spatula; place under broiler and cook until glaze bubbles and begins to brown at edges, about 5 minutes. Remove loaf from pan and spread evenly with remaining glaze; place back under broiler and cook until glaze is again bubbling and beginning to brown, about 5 minutes more. Let meatloaf cool about 20 minutes before
- slicing.
