Westport Shrimp(From A Taste Of Aloha)
- 1/2 c. butter
- 2 c. whipping cream
- 2 Tbsp. cornstarch
- 1 tsp. curry
- 3 oz. sherry or cooking sherry
- 3 c. cooked medium shrimp or 5 c. cooked, diced chicken
- 2 c. cooked rice
- 1/2 to 3/4 c. golden raisins
- garlic salt to taste
- 1/4 c. grated Swiss cheese
- Preheat oven to 325u0b0.
- Grease a 3-quart casserole.
- In a saucepan, bring butter and cream to a boil.
- Reduce heat.
- Mix cornstarch and curry with the sherry and add to the cream. Cook until thickened, stirring constantly. Add shrimp or chicken, rice and raisins.
- Blend in seasonings and pour mixture into the casserole.
- Sprinkle cheese over the top and bake, uncovered, for 30 minutes or until cheese is melted and slightly browned.
