Helvetia Pumpkin Bread (Amy Roloff)
- 1/2 cup plus 2 tbsp sour cream
- 2 tsp baking soda
- 2 tsp baking powder
- 1 cup butter, room temperature
- 2 cups sugar
- 1 can pumpkin
- 1/2 tbsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 2 eggs
- 1/4 cup vegetable oil
- 1/8 tsp vanilla
- 4 cups flour
- 1/2 tsp salt
- oven at 350
- combine sour cream and baking soda
- in separate bowl cream butter and sugar together until fluffy
- add sour cream to butter/sugar mixture
- in separate bowl combine pumpkin, cinnamon, nutmeg, ginger and pumpkin pie spice; whisk in eggs one at a time, add oil and vanilla
- add pumpkin mixture to butter/sugar/sour cream mixture
- add in flour, baking powder, and salt
- grease 2 loaf pans and add half of mixture to each
- bake 45+ minutes until knife comes out clean
