Shrimp Creole
- 1 lb. raw cleaned shrimp
- 1 (1 lb.) can tomatoes
- 1 (6 oz.) can tomato paste
- 1 green pepper, chopped
- 1 large onion, chopped
- 1/2 c. chopped celery
- 2 cloves garlic, minced
- 1/4 c. chopped parsley
- 1 tsp. chili powder
- 1 tsp. sugar
- 1 Tbsp. Worcestershire sauce
- 1 bay leaf
- 1/2 tsp. gumbo file
- 1 Tbsp. bacon drippings
- salt and pepper
- Saute onion, celery, garlic, bell pepper and parsley in bacon drippings until soft.
- Add tomato paste, tomatoes and 1 cup water. Add all other ingredients except shrimp and gumbo file.
- Cook slowly, about 1 hour.
- Add raw shrimp; cook 15 minutes.
- Add gumbo file.
- Serve over rice.
