Shrimp Creole

  1. Saute onion, celery, garlic, bell pepper and parsley in bacon drippings until soft.
  2. Add tomato paste, tomatoes and 1 cup water. Add all other ingredients except shrimp and gumbo file.
  3. Cook slowly, about 1 hour.
  4. Add raw shrimp; cook 15 minutes.
  5. Add gumbo file.
  6. Serve over rice.
