Cauliflower Pepper Jack Bake
- 1 head cauliflower, cut into florets
- 8 carrots, peeled and chopped
- 16 ounces carrot juice
- 1 leek, washed and sliced, white part only
- 2 cloves garlic, chopped
- 3 yellow or zucchini squash, sliced
- 1 tablespoon itallian seasoning
- 1/4 teaspoon cayenne pepper, or to taste
- 1 tablespoon nutritional yeast
- 1 tablespoon no salt magic chef
- 6 slices veggie pepper jack flavor cheese
- 2 teaspoons smoked sweet paprika
- Pre-heat oven to 350.
- Place cauliflower in baking dish.
- Simmer carrots, leeks, garlic, squash in carrot juice until tender. Add remaining ingredients except cheese and paprika and blend in vita-mix until smooth.
- Pour over the cauliflower in pan and bake about 1 hour or until cauliflower is done. Place veggie cheese over top and leave in oven just until melted. Sprinkle with the paprika. Serve hot.
